Too Much Zucchini? How to Stop the Glut and Save It
Every summer the same thing happens: the zucchini all comes at once and half of it goes soft on the counter. The fix is three steps. Grow fewer plants, pick small and often, and have a plan to save the extra before it piles up.

Grow fewer plants than you think
Summer squash is one of the most productive plants in the garden. Most households need just 1 to 2 plants. Three or four will bury two people.
Let the planner size it from how often you actually want to eat it, so you start with the right number instead of guessing.
Pick small and pick often
Harvest zucchini at 6 to 8 inches long. Smaller fruit tastes better, and frequent picking tells the plant to keep setting new fruit instead of growing baseball bats.
At peak season, check the plants every 1 to 2 days. A zucchini can double in size in a day or two of warm weather.
Save the surplus before it piles up
When you still end up with more than you can eat fresh, preserve it three easy ways:
- Dehydrate it into chips or slices. Dried zucchini keeps for months in a jar and takes no freezer space.
- Freeze it shredded in 1 to 2 cup bags. Perfect for zucchini bread and soups all winter.
- Pack it in a vinegar brine. The added acid makes it safe to water-bath can as a relish or condiment.
The honest part: do not plain-can zucchini
Zucchini is a low-acid vegetable, and there is no tested, safe recipe for canning plain zucchini in a water-bath canner. Older recipes for canned zucchini were pulled for safety. Freeze it, dry it, or use a vinegar brine instead. To can low-acid vegetables in general, use a pressure canner.
